RAMEN

This ramen is the ultimate comfort meal. Super easy to make, packed with aromatics that support your antioxidant status, prebiotics and probiotics to support your gut microbiome. Miso paste (fermented soy) provides probiotics to replenish a depleted microbiome, as does the bone broth paste. Bone broth paste is a great swap as opposed to stock cubes due the rich collagen, amino acids and minerals and absence of additives and preservatives. An incredibly easy and comforting ramen that you can add your own twist to. For a gluten free alternative, you can use rice noodles or pad thai noodles. Adding extra protein and nourishment could look like tofu, chicken, beef or even dumplings!


INGREDIENTS

1tsp sesame oil

3 spring onion, diced

1 cube ginger grated/diced

2 clove garlic minced

1 heaped tbsp miso paste

3 cups filtered water

2 heaped tsp bone broth

20g rehydrated shiitake mushrooms

2 eggs

1 serve organic ramen noodles

1 bok choy

METHOD

Rehydrate your dried shiitake mushrooms with boiling water and let them sit for 20-30 minutes.

Heat sesame oil in a small saucepan and fry-off the spring onion, ginger, garlic and miso paste.

Once fragrant, add your water and bone broth, bringing to a simmer.

Once simmering, add your eggs and bok choy to boil within the ramen. Simmer for 8 minutes, adding your ramen noodles and b in at the 4 minute mark.

Add your boiled eggs to ice-cold water and peel before serving.

Top with garnishes such as coriander and sesame seeds.
