MUM-CODED TUNA PASTA

An anti-inflammatory, gut friendly tuna pasta that is mum coded. What is mum-coded you ask?… well it’s for the time poor Mum who’s kids absolutely love pasta (mine sure does).

Nourishing your little ones can only happen if you keep yourself nourished too.

Tip: you can swap the tuna to whatever protein you have on hand.


INGREDIENTS

Gluten Free Brown Rice/Pulse Pasta

70g Wild-Caught Tuna in Olive Oil

¼ Avocado

Juice from ¼ Lemon

2 Stalks Broccolini

25g Lugias Basil Pesto

Salt & Pepper

Fresh herbs (basil, parsley) would be great if you have them.

METHOD

Begin by boiling your water to cook your pasta (cook desired amount for leftovers for your little one/s).

Add the pasta and broccolini to the boiled water.

Meanwhile, mix tuna, lemon, pesto, salt and pepper in a bowl.

After a few minutes, take out the broccolini and chop into bite-sized pieces, add this to your mixture.

Once the pasta is ready, add one serve to your tuna mix and enjoy as a low-fuss lunch!
