BOP FRITTERS

INGREDIENTS

1 whole beetroot, grated

1 white onion, diced finely

1 white potaoto, grated

2 eggs

pinch of flaky sea salt

cracked black pepper

1 tbsp diced fresh herbs

1/4 cup wholemeal spelt flour (or flour of choice)

Ghee, butter or coconut oil for cooking

METHOD

Prepare all of your ingreidents and mix together in a large bowl until well combined.

Heat a large fry pan over medium-high heat with a dob of butter, ghee or coconut oil.

Once hot, spoon your fritter mix into a fritter shape and cook until golden and crispy on each side.

Place your cooked batch on a platw with paper towel until your mix is all cooked.

Serve your crispy BOP fritters with a side salad and source of protein for a complete meal or enjoy as a snack with avo & cottage cheese.
