INGREDIENTS
1 bowl of butter lettuce, washed
3 large handfuls of rocket, washed
1 cup apple cider vinegar (ACV)
1 fennel, sliced thinly
1/2 red onion, sliced thinly
2 oranges, sliced into wedges
1 large handful of dill, chopped
1/4 cup shaved almonds
1/2 block feta cheese, crumbled
3 tbsp olive or hemp oil
1 tsp raw honey
1 tsp sesame seeds
1 tsp dijon mustard
2 tbsp ACV
orange zest
METHOD
Add your fennel and red onion to a bowl of ACV to express pickle for atleast 5 minutes.
Set your lettuce & rocket down in your servery bowl.
Add the remaining salad ingredients to your bowl; oranges, dill, shaved almonds, feta.
Add your express pickled fennel and red onion, topping with more dill to finish.
Prepare your dressing ingredients in a small jar and shake to combine. Pour this on when ready to serve.
