STEWED APPLE PECTIN

INGREDIENTS
3 green apples chopped with the skin on
2 tbsp filtered water
1 tbsp salted grass-fed butter or coconut oil
1 tbsp pure maple syrup
1 tsp ground cinnamon
1 tbsp fresh ground ginger
pinch of flaky sea salt
METHOD
Chop the green apples into bite-sized pieces, leaving the skin on.
In a medium-sized saucepan over medium heat, melt the grass-fed butter or coconut oil.
Toss in the chopped apples, stirring to coat them in the butter or oil.
Sprinkle the ground cinnamon and freshly grated ginger over the apples. Stir to combine, allowing the fragrant spices to bloom.
Drizzle the pure maple syrup over the apples, then add the filtered water to help soften the apples.
Reduce the heat to low, cover the saucepan, and let the apples gently simmer for 10–12 minutes. Stir occasionally.
Once the apples are tender but still hold their shape, remove from heat. Add a pinch of flaky sea salt to finish.
Refrigerate in an airtight container for up to 3 days.
