SWEET POTATO & APPLE SOUP

INGREDIENTS

2 spring onion, diced

3 garlic clove, diced

1 tsp curry powder

1 tsp turmeric

1 tbsp EVOO

1 handful of coriander, diced

800g sweet potato, chopped into small cubes

1 carrot, chopped into small cubes

1 apple, chopped into small cubes

100g of split red lentils, preferrably soaked overnight

1.2L of filtered water

2 tbsp bone broth concentrate

270ml coconut milk

METHOD

Prepare all of your ingredients.

Heat your EVOO in a large saucepan and fry off your onion, garlic, curry powder and turmeric until translucent and fragrant.

The add your sweet potato, apple, carrot & split red lentils to the pot.

Add your water, coconut milk and bone broth and bring to a boil.

Simmer for 30 minutes or until all vegetables are soft.

Finally, blend with a stick blender, serve & top with some pumpkin seeds and flaky sea salt.
